Among them: wild boar ragu over garganelli pasta; lobster Bolognese (done with slow-cooked tomatoes, over pasta alla chitarra -- that's "guitar" and it's rougher-textured, sort of square-edged strands) and grilled lamb chops with charred onions and mint salsa verde. 1000 N.C.
