On the menu: fried capers with smoked egg yolk and tuna tartare, with 2012 Tenuta di Nozzole Le Bruniche Chardonnay, Toscana; lamb pancetta and truffle risotto with 2011 Michele Chiarlo Le Orme Barbera D’Asti Superiore; veal osso buco with 2010 Tenuta Campo Al Mare, Bolgheri; and tellagio cheese, balsamic-braised pine nuts, New Town Farms roasted figs and prosciutto di Parma, with Caposaldo Veneto Prosecco.
