The Blue Taj formally opens for dinner Feb. 8 at Ballantyne Village (where Vesuvio once was). Sibling to Copper in Dilworth, this will offer eclectic cuisine, says owner Apar Singh Pannu, with a menu by consultant chef Mel Oza. Some examples of dishes: chimichurri-rubbed chicken with a Provencal-style bean stew; Szechuan-inspired seafood medley with Oriental vegetables; and duck and mushroom taquitos with housemade pastry. Says Oza: “Think Wolfgang Puck. Elegant….
