Copper River salmon (the photo above comes from copperriversalmon.org, which offers more info about it) has become heralded as "the filet mignon of salmon," as a chef in this Seattle Weekly story puts it. That story also gives a brief history of the marketing push for the fish, and reasons for its being prized (and, of course, quotes a few naysayers).
